She can't track you using Find My iPhone, or see your iCloud data, without your iCloud password if that's what you're asking.
She has access to unlock my phone, but not my iCloud password. Just read that now the iPhone 5 can be jail broken. If this is true can she jail break my phone as I'm sleeping and install an app like "iPhone 5 Spy App" or "ikey Monitor", which run invisible ?
If you don't trust her, change the passcode on the phone.
