Can I delete an account from iPad with out affecting their iPhone as they have been synced
My email messages are being sent to me via someone else's account how do I stop this?

Not quite sure what you are saying here. Is there an email account configured on your ipad that belongs to someone else? You can delete the account from your ipad, but it does not delete the account from the email service provider. Not sure if thats what you're asking though.
What I'm trying to figure out is if when I email myself photo's and notes it gets sent to me via another persons email address that has previously used the iPad. So I want to know is if I delete her account from the iPad will it affect her iPhone account in any way shape or form?

What you just posted can only happen if the mail is forwarded from one account to another. Mail forwarding is set up within preferences of the primary mail account.
You should be able to delete the account from the ipad without having any affect on that same account on another device.
But to make sure, what is the email provider?
