You SHOULD be fine. If anything ,you can just say you were stopping in Cyprus for X weeks. Apple's warranty is worldwide.
If the system you buy is clearly NEW, you may owe Value-Added tax in Europe, 17 percent of the Retail price in many countries.

The standard Apple warranty for computers sold in the US is one year. If you wish, you may extend that coverage to three years by purchasing an AppleCare extension.
These warranties are honored word-wide.

I believe you can buy AppleCare any time you wish, but it will only apply from you ariginal date of purchase of the Mac you buy it from.
So for example, if you buy AppleCare with your Mac, you get 3 years of support, but if you buy AppleCare 18 months after you buy your Mac, you get 1.5 years of support for the same price.
Becasue of this, it's usually best to buy it with you Mac.
Didn't I see that the Mac Pro is no longer being sold in the EU? (Since, if you open the case while it is running, there is no screen protecting you from the fan, and thus it does not meet EU safety requirements.) So, would it still be legal to import it into Europe?

That is not quite right.
The Applecare two-additional years extension (from date of purchase) MUST be bought BEFORE the original 12 months of included warranty coverage expires, or you simply cannot buy it.
The reason for this is to keep users from waiting until their Mac Breaks down before purchasing the extended coverage. By forcing the purchase before one year elapses, some users will contribute their [insurance-like] premiums, but will not end up collecting on the coverage. This keeps the cost of the program [like the cost of most insurance] much more reasonable.
Well then I apologise for my misinformation, I never saw that on the AppleCare sale page.
THe Mac Pro is definitely still sold in some parts of Europe. I can buy one now and I live there.
Wow, that's twice in one thread, they HAVE pulled it from online stores. Basically it lets you look at everything but the buy button has disappeared. You can still buy it in-store though, if not at Apple itself then at the authorised retailers, as I work next door to a big chain PC store that sells it.
Personally, I wouldn't give a warranty any consideration. Our organization has purchased many Mac Pros with zero problems.
Yes, computers do break. However, I think the risk is negligible.
