I want to delete some songs & audio books on my itouch but my iTunes on MacBook Pro does not display the touch under the "Devices" listing in Finder. The window comes up where I can sync calendar/contacts, update, backup/restore BUT I can't figure out how to get to the files on the touch itself to delete.

Help would be appreciated.

If you  have iTunes 11 turn on the Sidebar. Go to iTunes>View and click on Show Sidebar. You can also do a Crtl+S to show the sidebar. The sidebar is where Devices appears. and Control+B to show the Menu bar

Next try:

iOS: Device not recognized in iTunes for Mac OS X

Do not omit the Additional Information paragraph.
