The new itunes doesn't have a source list.

I can't seem to find my ipod listed in the menu or anywhere else. Am I just not going to the right section of the library?

CTRL-S may work on windows versions of iTunes, but i cant get it to work on my mac. but there's an easy way to change the name of your device on mac versions of iTunes.

connect the device to your mac, open iTunes and display the connected device. then click the 'Summary' tab and in the top section double click on the device name. it will let you edit the name there.
