Question about iPad Memory

I'm trying to decide if a 16gb iPad will be enough or if I should get the 32gb. Of course, if money were not an issue I'd get a 128gb, but like most people it is. What I'd like to know if the memory is used primarily for storage, or if it works like RAM in a desktop computer. I may want to use it for some recording and basic sound editing. I'm very familiar with the size of media files, but would an iPad with more memory run more smoothly, or does it have only a small effect?
