My ipad was receiving the text message conversations from the various phone numbers linked to my account. Now it is only showing my email address and one number. I don't know where the other numbers went and it won't let me add them.

Turn off Messages and sign out of your Apple ID in the Messages Settings, restart your iPad and then turn Messages on again, sign in and see if the phone number that you want to use appears as an option.
