I sent my iPhone away for repairs 7 days ago and it still hasn't returned, any idea when it will come?

iPhone 4S, iOS 6.1

Also, it has been on the first step for the whole week, did it get lost in the mail or they just forgot to update it?

No. We are just users here like yourself. We have absolutely nothing to do with anything that get sent into Apple.

You really need to call Apple Customer Service for help with the status of your iPhone.
