How to delete the whole camera roll off iPhone 4S?
Whenever I try to delete them, it will not work, when I try in iTunes, "Selected folders" is gray.

You don't delete them using iTunes. You can import them to your computer, then choose the option to delete after importing. See http://support.apple.com/kb/HT4083.
I already imported them, but I never selected "Delete after import" Is there a way where I can get everything back off it without windows saying that there are new pictures.
Don't know how to "mass delete" them using windows. On your phone, you can always open the camera roll, tap Edit, tap all the photos, then tap Delete.
I guess it's worth a shot. I have like 3,000, so I better get going! Lol.
Open the iPhone's camera using Windows Explorer like you would any other camera... it will show up as a drive in WE. From there, navigate to the DCIM folder (make sure your phone is not locked with a passcode) and you can select and delete all pics in less than a minute.
Here's a useful little trick to deleting all photos in the camera roll at one time:
Go to Settings > General > Usage > tap Photos > slide your finger left-to-right across Camera Roll and it will give you a "Delete" option. That will delete all of your photos in the Camera Roll.

I didn't either. Must have been added with a recent update, wasn't there before as I recall.

I had these exact problems tonight and solved them thusly ...
Device: iPhone 4S
iOS: 6.1.3
Windows: XP SP3 (yes, still)
nightsd01's cool trick above also did not work. It would present the Delete button, but pressing it unfortunately did nothing but send me back 1 screen, where I could not reselect "Photos & Camera" again unless I went back another screen to General. Going back in looked the same as the first time. This should have worked. Bug!
Another attempt into My Computer > phone looked promising but a dialog box reported the camera/pictures were somehow busy and I could wait for them to become available (something it hadn't done earlier). This led me to ...
After shutting down and cold starting both the phone and the computer, reconnecting the phone brought up the Apple iPhone / Camera Connected dialog to select the program to launch (this had not been working after the first connect tonight). This time, both My Computer > phone and choosing Microsoft Scanner and Camera Wizard > Advanced Users Only both worked to bring up the phone's pictures in a window (the same place that failed on a Select All > Delete earlier).
With both Search and Folders buttons not depressed, the Camera Tasks area in the left column presented the option to "Delete all pictures from camera", which ultimately worked to delete all of my pictures from the iPhone's Camera Roll.
After all that, I'm not sure if it was the reboot of the phone and/or the Windows computer, or the use of the Delete All Pictures option that finally did it. I'm just glad it did.
I was just able to do this through Preview application. It's very easy!
Go Preview > File > Import photos from iPhone > Select all the photos and hit Delete button.
It's that easy.

Thank you rategy, for posting that note. I'm doing it right now - deleting over 3000 photos! I tried the same method with Image Capture, which used to have the same ability, so I was told.
