If I had all the HDMI Cables and Adaptors for my iMac, could I use my iMac as a display if I connected an xbox or another HDMI device to it, or is there any software I could get which would allow me to do that?

The iMac can play HDMI output. If it has two mini-Displayports or Thunderbolt ports, it may support video through one of those ports.
No, only certain year models with DisplayPorts work as external displays using the DisplayPort.
