After installing iOS 6.1.2 my iPhone 5 and iPad 2 stopped connecting with my corporate email account using Microsoft Exchange. I can still access the email via webmail, but I am looking for a solution to either restore 6.1.1 or fix 6.1.2.

Reverting to a previous version of iOS is neither supported by Apple nor the right thing to do.
Try the iPad Mail Assistant first:

If your employer has set up special security features, etc. for email, it may be helpful to contact their IT dept.
