I don't know how to delete a Numbers Template in the iOS version, but I'll answer the OS X question since you posted in the OS X forum.


In Mountain Lion, click on the Go menu and hold down the Option/Alt key while you view the menu. Choose the Library item. This is your User Library. Navigate to Application Support, iWork, Numbers, Templates, My Templates. Send the one you want to delete to the Trash.
