I was taking notes in Evernote on my iPhone when I accidentally deleted a paragraph of text while not paying attention.
IF I was on my Mac I would simply redo from Edit menu BUT how to redo after accidental undo in iOS app?

There is no system wide way of doing that, it's not a feature of iOS.
Check the app to see if they have that feature.
The Evernote Web app, I believe, keeps a history of the note. If it was synced to Evernote before you deleted, you may find it there. You'll need to get more information on how to access the note version history on the Evernote site.

Evernote created another version - a sort of recovery version - so I managed to restore my original text when I opened Evernote again and it synced to server.
I will test the shake my phone option next.
Undo - redo used often so must use this intuitively.
