I actually work for AT&T and the phones themself are not unique. I did just figure out how to do it. They are supposed to show up with this already done. This one did not. I figured it out. You are right though, it is proprietary and I had to access some stuff the general public wouldnt get to have. I never thought it would be so in depth...... For free advertising. Thanks for looking though.
No, the phones are not unique. However, generally, the demo content also changes some settings, such as entirely removing the Reset menu. I find it surprising that Apple allows you to access the demo content, even if you do work for an authorized Apple reseller.
You probably already figured it out by now haha. But basically you have to have the Demo Content only version of iTunes installed on a pc. From there you set up the device. Everything is outlined in a job aid on myCSP.

The content on a phone in a store that just randomly plays on the phone to show you what it can do.

That only comes on special demo phones provided by Apple. It's proprietary content. As and end user, you can't get it.
