Most movies for kids and family, such as Disney movies that are available in the iTunes Store have an audio track option in French only.
I do not understand why.

Apple can only sell in a particular country what the content providers (e.g. the film studios) grant them licenses to sell. You can try requesting that other language versions be added to the Spanish store, but ultimately it's the studio's choice : http://www.apple.com/feedback/itunes.html
