On an expensive and fancy gadget such as this, something so simple must be an option? I've found apps that I can faff around with for messaging, but not one to change the over all style on my entire phone. Thanks for any input!

Nope. No way to do this on the iPhone
Because Apple cares about security and doesn't want a sketchy developer stealing all of your personal data, installing key loggers or some other kind of malware-apps are blocked from making system wide changes or accessing the core of iOS.
You could buy an expensive android phone where they don't care about your personal safety or security that allows that feature.
Yes, and that's great however, Apple could throw us a bone and add some font/style/personalization options...

Its sad to see that apple wont allow apple users to change the font style but its awesome that they dont want our data and things to be stolen or looked at by malware apps and all those other apps!
