how do i log out of icloud on my iphone 4s
I've changed my email address for my apple id but cannot log out on of iCloud my iPhone to update the details

You don't login or out using an iCloud account on an iOS device. You delete the account...Settings>iCloud...scroll down...delete account. Now, set it up again using your new ID.
But it says that it will delete all photos etc - how do I prevent that?
What it says is that Photostream photos will be deleted on your phone & any documents stored on the phone will be deleted...that's the way it works. If you want these photos, you need to save them first. For contacts, calendars, etc., you'll be asked if you want to keep on the phone or not.
