For some reason a note I wrote in the Notes app just vanished. I was hoping I could retrieve it from my iTunes account? I was thinking it might be listed from before (I haven't synched my iPhone yet)

Notes are not saved in iTunes and there is no way to access them via iTunes.
Notes should be synced with your email to the configured email account.
If they are not, they would be included in the backup of the device done via iTunes/iCloud but only usable when restored via iTunes/iCloud to the device.
