Thinking about getting the Mac Book Air with 256gb SS hard drive.  I'm curious if the applications ( such as excel, iTunes,etc) count towards the 256gb allowance?  I'm wondering if most people have an external storage device with these devices that have limited storage.

Yes, they do. The applications themselves take up little space.

As Niel said, yes. In general what takes up the most space are video, music, and digital photos. By keeping my music & video on an external drive (using iTunes Match for music) I've been able to live within the 256GB limits with plenty to spare.
