It appears to be more financially and practically obvious that it is better to buy a separate SIM card and install it in iPhones to get the best performance/price options in international use options. In Europe that is available, can I do that?

I wish to install new SIMs for my iPhones in the UK to take advantage of far better rates and cost. Does anyone have any advice or caveates concerning this? Thanks.

iPhone 4S, iOS 6.1.2

You need an unlocked phone. If your phone is locked to a carrier you must ask them to unlock it. Some will, others will not. Or you can buy an unlocked phone directly from Apple.
