I had no problem installing Windows 7 Pro with Bootcamp.
With Windows 7 running, insert the Windows 8 Pro install disk and follow a normal install path.
I had the same problem about installing BootCamp 5 on windows 8, the BootCamp64.msi, was missing.
I followed this method here and it worked like a charm, you just need to check what version of BootCamp was already installed in order to get the right download.

I tried to install Windows 8 a month or so back on my Late 2009 27in iMac. I did some workaround for the drivers but don't remember what it was, and got it working but experienced the freezing issues talked about here (sometimes immeidately, sometimes not for a while). I stoped using w8 because i was scared of the freezes. Since I have gotten a time machine drive a week ago and since reading this, I might try and boot it up again tonight and see what happens.

I've got Windows 8 running on my mid 2009 MacBook Pro with the latest BootCamp 5.0.533 drivers AND the latest NVidia 314.22 driver too!

With your suggestion I was able to install everything on my iMac 21,5 late 2009.
Just one problem, altough F1-F2 does popup brightness indicator, brightness is stuck to the maxumum level.
Even going thru the Boot Camp applet is does not change anything.
Also, Windows brightness indicator is not available.
Any suggestion apart to completely remove and reinstall video drivers?

The first BootCamp install packahe you should down load fromhttp://support.apple.com/downloads/#macoscomponents is actually 4.0.4033
That will be your first BootCamp installation in Windows 8 that works. Im so sorry Markeez for wasting your time, my excitement had blinded me last night.
Also be sure to copy both 4.0.4033's folder and the latest 5.0.5033 folders to your Windows 8 desktop as well, dont run them off your USB stick or DVD/C, whatever media you copied them to.
So Markeez, after you download the correct Windows 7 Support Software 4.0.4033, simply click setup.exe and it will run without any trouble.
Then after the inital BootCamp install is complete, your MBP restarted and all is done, you need to perform the "Run as Administrator" trick i posted above. Its real easy. Open notepad, and copy the EXACT code i posted in the tutorial in a fresh new doc, and save the file to your desktop EXACTLY how i posted itAdd_MSI_Run_as_administrator.reg
Based on your description I believe you are seeing the Windows 8 brightness indicator and not the apple brightness indicator (same as in OS X). If that's the case then do this (as per my instructions at: Macbook Pro Mid 2009 - Bootcamp 5.0.533 - Windows 8):
Hit your Windows Key and "X" which will open a menu of options. Choose "Device Manager " from the list.
In the Device Manager window expand "Monitors", right click on the Generic PnP Monitor, and choose: "Disable". When asked if you really want to disable this device say "Yes".
And like magic your brightness controls will now work! (A restart may be required, but I didn't need to.)

The scenario is exactly inverse.
- Windows 8 Brightness indicator is not available.
- Hitting fn+F1 or F2 does pop up Apple Brightness indicator and it does move. However display brightness is not affected (brightness doesn't change)
- The same in Brightness tab in BootCamp Application, I can use the slider but if I click on Apply it doesn't change anything.
I already tried to change "Adaptive Brightness" option as suggested somewhere but no luck.
Edit: BTW I tried disabling the screen... no luck..
