How do I back-up the games/apps on my iPod Touch 4 and preserve the history and levels achieved in the games?

If you restore from iTunes backup all synced media like apps and music has to be in your iTunes library since the backup does not include synced media. If the apps are not in the library there is not place for the restore app data to go.
