I have a spreadsheet in numbers with a text field containing commas.
in order to export to .csv delimited format, I want to change the separator from a 'comma' to a | character.
I cannot find where I can set this parameter in the Numbers export process.
any ideas?

You do not have control over the delimiter. What is the problem with a text field that has commas and semicolons? The text in the CSV will have quotes around it so that the commas (or semicolons) are not misunderstood.
you can always open the resulting CSV file exported from Numbers in your favorite text editor and replace the delimiter with what ever you want using search and replace
Click on cell A1 of the Numbers table, then select All. Copy.
Paste into a Text Editor (Text Edit, Text Wrangler, etc.). You;ll then have a text document, with the fields (columns) separated by tabs and the records (rows) separated by returns.
Save the text file, then replace the filename extension with .csv

The problem is other reasons other than using numbers to use a CSV.
