You can't move your photo stream, synced notes, iWork documents or your current iCloud email account but you can move everything else. To do this, first save your photo stream photos to your camera roll (tap Edit, tap all the photos, tap Share, tap Save to Camera Roll). Then email any synced notes to yourself; you'll have to copy and past the text from these emails into new notes after you move to the new account. Also save any iWork documents you may be syncing with iCloud.
Then go to Settings>iCloud, tap Delete Account, and select Keep on My iPad when prompted. Then sign into the new iCloud account, turn on your data syncing and choose Merge when prompted to upload your data to the new account.

Thanks for the quick reply. I knew you could do that but I was hoping to move my iWork stuff as well because I have a lot and saving them would take a while.
You're welcome. I don't use iWork so I'm not sure how you turn off syncing with iCloud, but I assume you would be able to turn off iCloud syncing from within the apps and still keep a local copy of the documents on your device. If so, you could then turn iCloud syncing back on after moving to the new account.
You can also back up iWork documents to your computer as follows (from http://support.apple.com/kb/HT49100:
iWork for iOS apps
For documents created with the iWork for iOS apps, you can download those files by visiting icloud.com/iwork on a Mac or PC and downloading a copy. After downloading the files, you should back them up using the normal methods you use for backing up local files such as Time Machine, manually copying files to external hard drives, and burning to CD/DVD.
I knew about that, but it still only allows you to download things one at a time. I guess it'll work. Thanks. =)
You're welcome. There may be another way, but as I said, I don't have any experience with iWork. I would have thought you could go to (for example) Settings>Pages, and turn off the setting to sync with iCloud and you would get a prompt asking you if you wanted to keep the documents on your device. But perhaps not.
Oh wow - there is, how did I miss that?!?! Thank you so much!!!
You're welcome.
