safari resetting

Very happy with safari but encountered a problem. Unfortunately, I installed an extension (McAfee) and since then its been nothing but trouble. I uninstalled McAfee but the problem persists. The issue is that it keeps resetting itself. I go ahead and uncheck "Java", uncheck "open downloads automatically" etc. I place all my preferences. If I "quit safari" , the next time I open Safari it resets completely. I then need to re-do everything again. UGGGHHH
