my iphone is being spy with stealthgenie, how can I remove it?

If you have reason to believe that someone had physical access to your iPhone long enough to jailbreak it and install StealthGenie, put the iPhone into DFU mode and restore it:

That will remove any software installed and may clear the jailbreak.

If no one has had physical access to your iPhone, they cannot have installed StealthGenie or any other spyware.

If you truly believe your phone was compromised in this way, before you attempt to remove it, contact the police. If it was done without your knowledge or consent, it is most likely a crime.
