I find the color of the days of the month hard to see. Is there any way to change the color of the days of the month to something else?

Nope. In iCal this is not adjustable, on either iOS or OS X.
Sure you can change the color of the text. First at the top of the left column under "On My Mac" select the calendar that you want to change text color. Go to Edit menu, and select Get Info. In the upper right hand corner there is a color menu bar. Choose the color you like.
