Had my IPod on ios 6.1.2 and tried to backup but it would get stuck just before being done so I tried updating to 6.1.3 thinking that would fix the problem but the same thing happens. I tried about 3-4 times. My ipod has never been backed up. I also have the latest version of iTunes.

Did yu try deleting the existing backup and then trying to backup again?
I don't think my ipod has been backed up but should I delete any other backups I have that are worthless now?
Yes, delete the backup(s). When an existing backup exists, iTunes will modify the last backup. Deleting the backup will make iTunes create an entire new backup.

Try connecting to another computer and see if you can back it up. Do not sync.
It still gets stuck at the very end even on a different computer.
Try:
- Reset the iOS device. Nothing will be lost
Reset iOS device: Hold down the On/Off button and the Home button at the same time for at
least ten seconds, until the Apple logo appears.
- The try again.
Other actions risk losing data or even bricking of the iPod. These actions would be to:
- Backup to iCloud and then go to Settings>General>Reset>Erase all Content and Settings. Then restore from iCloud backup.
iCloud: Restore your iOS device from iCloud
You will lose any non-Tunes purchases.
Then you can try backing up again and restoring from that backup again to update. Then yo can sync any non-Tunes purchases to the iPod.
