How can you add an invitee to a meeting notice that has already been created and currently does not have any invitees? I know you can add invitees when creating the meeting notice and I know you can edit invitees to a meeting that already has invitees included. I don't see where I can invite people when I go to edit the meeting notice.

Edit the calendar event, then tap Invitees.
Unfortunately, the "Invitee" field is not an option once I try to edit my calendar event. It is an option if I've created the event initially with invitees.
So somone has invited you and you want to invite others? Is that what you're tyring to do?
No. For instance, I created an appt/meeting in my calendar last week that did not include invitees. I now want to add an invitee. When I go into my appt to edit it, my calendar does not allow me to add invitees. It simply isn't an option.
