Your iPod Touch 2nd gen is out of warranty and chances are it cannot be upgraded any further than it currently is.
That does not discount having problems with it in a jailbroken state, but you do not have a warranty to loose on it, and if you have previously upgrade to the latest iOS you can, then upgrade issues will not occur.
The iPod Touch 5th gen should still be upgradable and still under warranty, so that would be at a greater risk should you jailbrake it.
It is your money, and your decision, but this forum cannot help you once you jailbreak.

And sometimes jailbreaking bricks the device to where it can't be restored.
If a person jail breaks, they are on their own, and, let's say you try to restore it and collect on the warranty, well, it's kinda like those folks that break the screen after they notice something wrong inside the device, doesn't matter if the manufacturer's defects were before the broken screen or not, the broken screen will be blamed for all issues...and that jailbreak will be blamed for all issues.
There is no safety net, no 'do over', no warranty.
Security vulnerabilities: Jailbreaking your device eliminates security layers designed to protect your personal information and your iOS device. With this security removed from your iOS device, hackers may steal your personal information, damage your device, attack your network, or introduce malware, spyware or viruses.
...
Inability to apply future software updates: Some unauthorized modifications have caused damage to iOS that is not repairable. This can result in the hacked iPhone, iPad, or iPod touch becoming permanently inoperable when a future Apple-supplied iOS update is installed.
... It is also important to note that unauthorized modification of iOS is a violation of the iOS end-user software license agreement and because of this, Apple may deny service for an iPhone, iPad, or iPod touch that has installed any unauthorized software.
Read the above and decide for yourself.
Jailbreaking voids the Apple warranty and also means that you will not get any support from Apple, including from this Apple forum. Jailbreaking can't be discussed in this Apple forum.
Not all jailbreaks are completely removed when the device is restored. As has been confirmed by other users, some jailbreaks leave "residue" that in some cases causes later problems and may be identified by Apple. Best not to count on a restore removing all traces, anyway.
Regards.
Jailbreaking means permanent loss of warranty, all support from Apple and support from these Communities.
Well technically, Apple will never know that you jailbroke your device if you restore it.
As others have said, sometimes jailbreaking leaves a trail in the iPod even after restoring
To fix it you can restore, and then you have to look in your device folders, and deleat the one called JAILBREAK (Differs for some people, but is obvious). Then you can take it back to apple, I did that with my iPhone 4,the did not say anything 🙂
