The heading sums things up. Everything worked great until I changed the airport extreme and redid the configuration.

Same problem here. I installed a new router and now Apple TV is stuck on getting date and time. Waited a while and went to screensaver, but apple remote (aluminum) does nothing but make light blink on Apple TV. Tried to manually pair remote again..but still nothing. Will try restoring with iTunes, but need to get a USB cable. This is crazy.
Found a micro USB and restored via iTunes. Back up and running..remote worked too.
Apple TV 3 will not connect to network. Using airport extreme and had to set up a new configuration. I've restarted the router and apple tv. On the screen the apple TV is trying to set the time. I push menu on the remote and it doesn't respond
