Verizon iPhone 5 SIM Unlocked- Any good SIMs for multiple countries?

I may be taking a cruise to Hondouras, Mexico, and Belize soon. I plan on taking my Verizon iPhone 5 with me on the trip, and I want to buy a Prepaid SIM Card, so that I don't have to pay Verizon's roaming rates.

Questions:

1) I know that it will change my phone number, but will I still have all of my contacts and other information?

2) Can I make calls while the Cruise ship is in the Gulf of Mexico? (Carnival Conquest)

3) Where can I get a Prepaid international SIM here in the U.S.? I want it to have it before I leave for the trip so I can see that it works.
