It allows you redeem a prepaid iTunes card or an iTunes gift given to you by someone else.

Redeem means to compensate or exchange.
The button allows you to put in a code, from an iTunes Gift Card or say a DVD movie Digital Copy code, or a special promotion and get a specified amount of credit added to your account so you can make purchases in the iTunes, App and iBooks stores, or get a specific download for free such as a Digital Copy of a movie or a song etc...
