Using my IPhone 4S overseas

I am going overseas next month and I am shutting off my service while I am over there.

I was wondering if I would be able to use my IPhone 4S via Wifi to still operate the apps such as Facebook, Safari, Skype, and Voxer?

Yep. Just put the phone in Airplane mode, then go back into settings & turn WiFi on.
