I'm unclear about what this means. Someone told me there is an apple101 somewhere, anyone know what that might be?

Trust Junk Headers simply means that if your email carrier has flagged a message as Junk then that should be respected by Mail.
I take it you mean that it will always go to junk folder? So that should be left checked to keep junk mail out of regular stuff.
