It's a promise not to reveal a company's trade secrets. I don't know that you would have to sign one to work at an Apple Store, but it wouldn't surprise me. If you don't have the legal standing to sign such an agreement (because of your age, for example) then your parents will have the standing to sign on your behalf provided they are willing to take responsibility for any failure on your part to uphold the agreement.

In most states, you need to be 16 years old to hold a full time job. 14 and 15 year olds may work part time (e.g., after school and on weekends and vacations), but are usually not allowed to work in factories. Minors under 14 years old are generally not allowed to work at all. This varies a little from state to state (check your state's regulations for specifics of work certification for minors), but if you are of legal age to work the required number of hours at an Apple Store, then you are old enough to work at an Apple Store.
