I have a new iPhone 5 and have the Bluetooth on for use in my car. But when hit the microphone button to voice text or if I try to use Suri in my car... it turns on the bluetooth and it doesn't recognise what I am tryting to do. Is there a way of turning off the bluetooth for voice texting or using Suri w/o turning it off totally?

It depends on what your vehicle will support. Some vehicles will not support the use of Siri or voice texting. Check this support document regarding the supported bluetooth profiles and see what your vehicle will support.
if u are asking of how to turn off bluetooth and siri,pls go to settings and there u will find the option of bluetooth.Go ahead and turn it off.For Siri,pls open general in settings and then open siri and select disable siri
