An itunes gift card is a plastic card you can get at most stores these days that has a pre defined amount of money in it. you use this money or credit to buy things from the iTunes, iBooks, and App Stores.

They usually come in different values. like 15 dollars, 30 dollars, 50 dollars etc... Or an equivalent in your country's currency.

What they are is basically codes that add prepaid credit to your Apple Id account.
