It opens them in quicktime, but I want to use them in Final Cut Pro or another editor before uploading them to YouTube. How do I do that?

First you should import the file into Final Cut Pro, Choose File > Import > Media (or press Command-I) then Import Media button on the left end of the toolbar.

Control-click on the AVCHD file, and choose "Open With ..." and name the application you wish to use.
But how do I use them in any other program than quicktime?
