I have a mac mini with Mac os x 10.4.11 Processor 1.66 HHz Intel core Duo. Memory 512 Mb 667 MHz DDR2 SDRAM
I want to upgrade to a newer software. What software can i upgrade to and how?

You can buy Snow Leopard for 20 bucks. But I advise adding more RAM. Not easy on your mini. Here is a great place for both memory and instructions.

I have just purchased snow leopard 10.6.5 and 2gb ram. So after installing the ram, snow leopard should work?

The difference between 2GB and 4GB with Snow Leopard is quite revealing. Especially if you want to run anything more than the Terminal.
Core Solo's and Core Duo's Mac Mini's can only take 1GB modules for a maximum of 2GB.
