Kiosk Mode - multiple iPads with 1 Apple ID
We need to set up thousands of iPads in kiosk/single app mode. Can we do this using just ONE Apple ID? Or do we need to create an Apple ID for each iPad?

You only need one Apple ID.
I strongly recommend that you use the Profile Manager system which is one of the services included in OS X Server, to control the configuration of the iPads, so budget for a dedicated OS X Server computer. This will prevent you from having to plug thousands of iPads into a computer with a white wire every time you want to change the way they are setup.

We already have an MDM in place. I'm assuming the MDM functions about the same as the Profile Manager? Thank You for the quick response.
Different MDMs do completely different things. If you've already picked your MDM then you can ignore what I wrote about Profile Manager, but you also need to ignore what I wrote about needing just one Apple ID. The documentation for your MDM should tell you how many Apple IDs you need.
