I have read all of the contributions with interest and the solutions given are useful.
However, just in case this has not occurred to some users, let me suggest a possibly simpler solution for personal viewing which is instantly reversible.
Whenever you want to view an email you have written with enclosures, but do not want to see them, simply click in the email and select all (command+A). Right click and choose view as icons. This will change ALL attachments to icons for your viewing.
If you want to change them ALL back, select all (commmand+A). Right click and select View in Place.
As others have already pointed out, this only alters how you view what you have sent.
Of course, the issue for most people is not how it looks on their machine but how it looks on the machine of the person it is sent to.
Has anybody any experience of attachment tamer? See http://lokiware.info/Attachment-Tamer/Mavericks but note that there is not a fully operatinoal version for Mavericks yet.

I have a MacBook Air 13" with the latest OS X and I'm using Apple Mail. I applied the relevant command in Terminal to show attachments as icons only which has worked for sending attachments. However, all attachments show as preview in my 'Sent Folder'. Is this correct?

I bought my first iMac when Snow Leopard was the OS. After I had made some progress up the learning curve I loved it!
I continued going with the upgrades, Apple's Mail, Pages and Numbers (my three most used programs after Safari) and now use Mavericks OS 10.9.2
Mail has been weird since Mavericks: hangups, must use force quit 100% of the time, opens without uaccess to the tool bar and messages - must shut off the whole computer and reboot from scratch; Pages has lost a lot of basic functionality and is a huge pain to use; Numbers is now so cumbersome I am not adjusting well at all.
I put on Parallels and run Windows 8.1 as well. I use Quicken finacial software and they don't make a Mac version.
After my rant about Mavericks being a huge step backward, Win 8.1 is leading the race back to a fubar'd (non-) functionality.
Are Microsoft and Apple sacrificing us old desktop fogies in favour of tablets and iPhones and the like? Or am I paranoid? Is Linux an option?

The problem is that, whatever you do at your end, the attachment still comes out in the body of the message at the other end. I have received complaints about this from two clients, which I have aired here before, but nothing can be done unless you [pay for and] load Outlook or maybe there are others that I don't know about, but Outlook is superior to Mail in all respects. I never thought I would recommend Microsoft.
The glaringly obvious question perhaps is why Apple do not fix all of the problems that they have created in Mavericks Mail App? Why should any of us want to spend a lot of time fixing issues created by Apple and adjust settings all the time when the Mail App used to work in Snow Leopard, was compromised in Mountain Lion and now ruined in Mavericks?
