I hit the arrow button in the top right corner of the email page. It now covers the entire screen and I've lost the top line and can't get out of email until I quit. How do I get back to the original screen?

Try going to view in the mail menu bar, and click exit full screen. (bottom of that drop down)
Just for your own info, as well as others here if you need to post again, you should correct your profile as it says 10.3.9.
Snow Leopard is 10.6.X
Lion 10.7.X
Eliminate some confusion.

You should also be able to push your cursor to the top of screen to make default Menu Bar appear and click the highlighted double arrows in right corner off again.
