Can we use an IR receiver like this http://www.outdoorspeakerdepot.com/infrared-receiver-extender-cable.html for the Apple remote in order to use it during presentations?

The retina macbookpro lacks the IR receiver. However, it does have something optic in the headphone port... Can we use this as a IR receiver with products similar to this one http://www.outdoorspeakerdepot.com/infrared-receiver-extender-cable.html so that we can use the Apple TV remote with it?

That receiver is designed for HD DVRs, not for PCs and Macs. However, I think that you won't be able to use the Apple Remote even with an external IR receiver because you can only pair the Apple Remote from System Preferences > Security & Privacy > Advanced. If you go there, you will check that the MacBook Pro with Retina display hasn't got an option to pair a Remote
