I open a fax template using Pages with Moutain Lion.
The fields are filled in with my wife's information rather than mine (we share icloud information though each has their own cloud id).
Where can that information be edited so that my information is the default to be used with pages templates?

If you are using the same computer you should have different accounts on the computer. The information is taken from the account and it is stored in the Contacts. To create a new user account you open the System Preferences under the in the menu. I hope it is called Accounts on Mountain Lion as it is on Snow Leopard.

Which template are you using? Perhaps you could start with a blank template and create your own fax cover sheet with your information (not linked to Contacts, but typed in).
Save as Template... with a name such as 'Fax Cover Mike'. That will be saved under Template chooser > My Templates.

I just needed to use the Contact's Menu Item Card, Make This My Card, with my entry selected in Contacts.
