¿core data files in itunes sync from iphone?

Hi,

This is a question about time ago software (no icloud), and I need now to find information, i do my question.

I synced time ago notes from my iphone (iphone 4 os 4.3.1), from my itunes, to mail.app, the sync appear in the sync log and ends correctly but the sync never created the files into the mail.app folders.

I´m looking for this notes synced from my iphone, actually i have mac recovery files from the date when i did the sync process and i need if is possible to know about the core data files uses itunes in the sync process (i don´t know if itunes use now the same type of files to do the sync process but is possible that yes).

I need to know if this files are sqlites, xml, have corrupt data under a secure protocol, a header... or some information to do searches into all the recovery data to try to find the notes.
