what does the message color mean?
When I send a message I have been told if it is green the person you are trying to reach phone is off or out of range. Blue they have read it. Is this correct?

Of course wrong.
Green - normal SMS / MMS
Blue - iMessage
White - Message you received.
If you do want to know the message is read or not, you could see text blow the message has been sent.

Blue indicates an iMessage - a message sent to another iOS device user on thier iMessgae account. Green is standard SMS/MMS text messaging. This article might be useful: http://support.apple.com/kb/HT3529
if the msg is green you send sms. If the msg is blue it is imsg (foc) and you can follow if it was read, in case the receipiant allows that.
