If I uninstall iTunes what happens to the iTunes folder?

If you uninstall iTunes, iTunes library won't be modified, so you will keep all the files you have in the iTunes library. However, it's good to make a backup.

You can play the music and videos you have in the iTunes library on another application you have, but you have to access to your iTunes library manually

Uninstalling/reinstalling iTunes should not affect your library, but you should backup anyway.

Protected content can only be played with iTunes. The rest of your media will play in suitable programs such as Windows Media Player, MediaMonkey, QuickTime (unless you remove that too), VLC, etc.
