I have just updated my soft ware on my I phone 5 and a symbol with just itunes and a USB cable is displayed on the screen - how can I get my phone back to function normally?

That's called "Recovery mode". It likely means that the update failed or was interrupted. You need to connect the phone to a computer with iTunes to reinstall the software.
