How can I enter ü using the Chinese pinyin keyboard on the iPad? That letter is not on the keyboard so I was wondering if there is some two key combination that will produce it. If not how can I suggest that it is included in the next iOS upgrade?

You are right, the ü, ǖ, ǘ, ǚ, ǜ in the popup menu serve no purpose, you just type v.
